Family owned and operated, Barossa earthworks make its wines from 100% Barossa grapes, grown at small family owned vineyards. Drawing on more than 160 years of local wine knowledge, traditional winemaking methods and minimal processing are used to preserve the purity, integrity, texture and flavor of the wines.
About the Vineyard
A typical cold Barossa winter flowed into a wet spring and cool growing season. This meant the harvest of Cabernet Sauvignon across our Barossa vineyards was up to four weeks later than we had experienced over the last decade or so. Fine and clear weather during the harvest period and a certain degree of patience, made for excellent flavor and tannin accumulation in our Cabernet Sauvignon grapes as seen in this outstanding wine.
Wine Production
Grapes for the Earthworks Cabernet Sauvignon are sourced from our growers throughout the Barossa. The grapes are carefully destemmed and crushed to fermenters where they are then gently macerated. Cool fermentation temperatures enhance the rich and generous fruit flavors and soft tannins enjoyed in the bottle.
Tasting Notes
Deep ruby red in color. Warm and enticing blueberry aromas frame a structure of luxurious mocha chocolate, sun ripened blood plums, cassis and rosemary. Round, soft and generous, the flavors lead with summer plum and berry compote, vanilla and boysenberry, followed by hints of mocha chocolate complimenting the smooth velvety finish. Barossa growers.
Food Pairing
Match with lamb or cherry tomato and tapenade tartlets served with a dollop of hummus and sprinkled with herbes de Provence.
